1) roast or roasted chicken?  Either one.  But you wouldn't say, "roast peanuts."

2) "medical assistant" and "nurse", what is the difference?  If by "nurse" you mean RN, or Registered Nurse, a nurse usually holds a BS degree and makes big bucks.  A medical assistant is a helper.

3) In Ame English, we pronounce: dating as dading or dating?  I'd say there's a little more of the "t" than there would be in "padding," but less that there would be in "detente," or "Detroit," or "Daytona," or "datura."  The difference is because of the accent (stress).
