A conditional sentence

If I didn't know better, I'd say we saw different plays.

I know what this sentence means, but can someone translate it in an easier way please? Especially the "if" part.

E.g. Our opinions on/interpretations of the play are completely different and it amazes me but I do know (=I have proofs) we saw the same play.
