But, the company says the number headed for South Korea is tipped to rise 25 percent. Other Asian cities, including Hong Kong and Taiwan, are also expected to receive more Japanese visitors thanks to a stronger yen.

Can I leave out 'a'?

Don't leave it out. Yen requires an article and the adjectival attribute (stronger) enables a to be used. See a recent thread that discusses the use of articles in similar cases.
