Please consider:

This definition includes THE nouns of some animals...
This definition includes names of some aniimals...

Cakes I make are good
The Cakes I make are good

I know that the examples with definite articles are more definite...but I am wondering whether or not I can use both of them without any difference in meaning (apart from the shading of little more definiteness of the counterparts with the, though all the examples are generic)

Not really more definite, as the nouns are defined by the same post-modification (of some animals, [that] I make) in all cases.  It is rather that the definite article is usually optional for the plural noun that is otherwise defined in context.
