I'm interested in the word ''angel'' here. Is it simply a name, like Angelic meringue, or does it have some other meaning?
Thanks

I guess the meringue is so white, pure and light that it could be an angel, no? But let me check...

I think it might just be an ordinary meringue, just called "angel" becuase it's light and white and fluffy. (quite unlike my own attempts, which go straight in the bin!)

Unlike the steak tartare, it's safer to buy them rather than make them.
Abbie, would you be up for a try in the chatroom?
