It is a moutain zoo, full of varties of exhibition animals.

One thing about getting into the big zoo with the map they gave you, I felt to explore this zoo with excitement.

One thing that bothered me was all captured animals seemed not happy or alive.

Are they OK?

With the map they gave me, I explored this zoo excitedly.
One thing that bothered me was that all the animals seemed unhappy and almost lifeless.

    I would put 'of' in-between 'all' and 'the.'  Is this just idiomatic?

    Oh, I agree you are right, but it sounds equally right with 'of' in there.  Is this just idiomatic?

Not idiomatic; of is a valid option.  Actually, I am surprised that the AH Dictionary did not mention it in that definition.  In grammar books it is often presented as:

All (of) my friends are gay.
All (of) the animals are sad.
