When I use this construction, I'm thinking of 'had'; so, 'hadn't you', as strange as it may sound, is what I determine to be correct. Better sounding might be 'shouldn't you', but I don't think it's as appropriate.

The tone of this sentence is not in a normal tag structure. When a sentence start with "you'd better", it's formed in an authoritative or advisory tone.
I think to make this sentence a tag question, it needs to be changed to something like:
“You would watch it closely, won’t you ?”

Quite so. I would surely pick hadn't you, or - if I were writing it - had you not. Hadn't you is the correct choice indeed, although shouldn't you / should you not may sound better to one's ears.

Grammatically, I agree "hadn't" is the logical answer. No questions there! But don't you find it odd with the posted context?
