Hello,

I read this, "as if shifting sands beneath our feet"
if I say "under our feet" ,does it make any difference

No, it will not make difference. To me, beneath is more bookish style.

The first is a common poetic phrase and would probably be taken figuratively.

Your suggested substitution would more likely be taken literally, and we'd think, "Hmmmm, something very strange is going on here!"
