a canceled check, to cancel a check.

I skipped through some words talking about checks. Unfortunately we in our country don't use checks as individuals. We only use cash and for big item a debit card usually.

From what I read, I got the idea but not sure that  to cancel a check is to draw up a check and a canceled check is a check that has been drawn up. I was really surprised because literally I would think that to cancel a check is to nullify it as we do with a meeting, an appointment or the like.

Could someone clarify this for me?

A check has been written by the payer and submitted to the payee; the payee has then exchanged it at the bank for cash, and the bank cancels the check with e.g. a rubber stamp to indicate that the money has been paid on the check.  The cancelled check is then returned by the payee's bank to the payer's bank, and the latter returns the cancelled check to the payer as proof of payment received by the payee.
