Shouldn't it be ''at/in the last'' in the following sentence? 

The cast of the movie shown by this website displays his name last, despite being a very popular actor today.

No, 'last' is fine. You could say 'at the end'.

However, there are a number of other problems with your sentence.

Say The movie cast-list shown on this website displays his name last / at the end, despite his being a very popular actor today.

No, last is right since the reference is to order: I was first, he was second and Tom was last in the race. However, I don't like the end of the sentence at all. Despite being has no subject and I consider it incorrect. Others may have different opinions.
