My understanding is that the word "celerity" means the same as speed.
So may I say
She worked for an hour with great celerity.  Does it sound odd?

The word has never come to my attention, but according to my dictionary your sentence is fine.  You might Google it to get a sense of how people are using it these days.

Edit.  Google was not a good suggestion.  All I find are names of companies and definitions.

Edit. Edit.  Yes, your example is fine.  I hasten to add in my defense that this is definitely an upper register word!
