Can I say:

How much chance do I have to get sth?

or should I say:

How many chances do I have to get sth?

or both of them are incorrect?

Both are incorrect. There's no such word as "sth".

I mean "something"

Both are correct but mean different things.

The first is "what liklihood is there of my being lucky enough to get whatever it is?"

The second is "how many attempts will I be allowed to get whatever it is?"
