3. Between 1:00 and 5:00 yesterday, twenty-five people signed the sign-up sheet for the conference.

4. That well known Italian restaurant specializes in the following foods lasagna, grilled shrimp, veal, and spaghetti with meatballs..

5. My Great-grandfather will be eighty-seven years old tomorrow

N-dashes are used between e.g .dates (March 3 - 5), not between parts of words.  Second-story uses a hyphen.

I've seen it suggested that an en dash can be used in compound adjectives where one part of the compound is naturally hyphenated,  e.g. "post–World War 2 history", although I think this is more one for serious typsetting aficionados to argue about and not really for general use.
