Can I say,

(a) Fred the fox was walking in the forest. He saw Croony the Crow perched on a branch.

(b) Fred, the fox was walking in the forest. He saw Croony, the Crow perched on a branch.

(c) Fred, the fox, was walking in the forest. He saw Croony, the Crow, perched on a branch.

 It seems to me that only a works because of the capital on Crow. In C, the Crow should not be capitalized because 'the fox' is not capitalized; therefore, only a works.
