Lack of gasoline in Palestine is forcing people to switch to cooking oil and other energy sources such as electric. Perhaps, it will work to the nation's advantage, creating a perfect environment to incubate the world's next major energy technology.

I guess you are right to say that electricity is a product of energy. If so, I believe you also think of cooking oil as an energy product which is derived from crops.

I think that using the word resource is better than source. Resource's definition in Oxford dictionary is a supply of sth that a country has and can use. So the word resource accords with context of your sentence.
