Our neighborhood has many restaurants; the dining/eating/meal/food choices are almost unlimited!

Do all of the bolded words fit in the above and convey a similar idea?

Well, they all sound redundant, since you have already mentioned restaurants:  the choices are almost unlimited.  However, only 'dining' sounds really natural to me.

For the sake of curiosity, isn't "dining" equal to "eating?" If yes, why doesn't "eating" do the trick in the least?

Dining is not equal to eating.  Animals eat; they do not dine.

Dine:  to take a meal, esp. the principal or more formal meal of the day.
