There is a short answer to this, but it doesn't touch on all the complexities of the subject.
In brief, regular verbs are those which have an -ed ending in both the past tense and in the past participle. Irregular verbs are those which are not regular. The past participle of an irregular verb often, but not always, ends in N.
Here are the infinitive, past, and past participle of a few verbs.
Some regular verbs:
want - wanted - (has) wanted
talk - talked - (has) talked
hope - hoped - (has) hoped
try - tried - (has) tried
Some irregular verbs:
go - went - (has) gone
hide - hid - (has) hidden
put - put - (has) put
sing - sang - (has) sung
