Hi,
Please help me when you are free.

Can "does" be removed from "How time does fly!"
Yes, it can. In fact, the common form of the saying is simply "(How) time flies".

If possible, why is "does" put? emphasis?
Yes, although the exclamation without 'does' is still quite emphatic.

Best wishes, Clive
