Five-star or five star ??

... This is a beautiful five star / five-star hotel....

I know both forms are being used, (but I've never seen people write "ice cream". Wink [;)] but which is more correct?

And is there any rules for using hypen??

I'll hyphenate it like "five-star" to lessen confusion such as below described.

Compare two sentences. 
     (1) There are five star hotels.
     (2) There are five-star hotels.
Someone possibly takes (1) as saying "There are 5 Star Hotels"
