Let's say I got a dollhouse for my two daughters. The girls' dollhouse is quite elaborate.

Let's say I got a bike for each of my two daughters. The girls' bikes need new tires.

In other words, more than one girl.

The word girl's is used when you are saying that a certain thing belongs to one girl.

The word girls' is used when you are saying that the things belong to more than one girl.
