Her or She?

I draw better than her? or... I draw better than she. 

        I know that if you add the word "does" at the end, then it would be "she".  But does adding that word to the end change the pronoun?  If so, why?

Technically, 'she' is the proper word.  We add 'does' to make it clear which is correct.  I say 'technically' because we often hear 'her'.

I draw better than she does. ==> "she does" is a clause, the struction of the sentence is " S +V better than S + V."
You just need the symmetry between 2 objects before and after "than" in your sentences.
Some examples:
    Tom can jump higher than Mike.
    I always work harder than you do.
    My mom looks younger than she really is.
