When you say 'you are my hero', do you always mean the person's gender is male? Or it is used as an adjective which means the person inherits the traits of a hero. If so, can I say 'They are my hero'?

I would probably not say "You are my hero" to a woman, no, but then "You are my heroine" sounds wrong as well.  I would probably rephrase the idea completely.

You can say They are my heroes.  (not hero if there's more than one)
