Anyway, and at the risk of sounding like a broken record because this has already been said, you use a hyphen to make a 'compound' word in the cases you mention mainly in order to avoid cunfusion or ambiguity.
"early-evening diners" are people who have dinner early in the evening. "Early-evening" is hyphenated because that's one way of showing that "early" modifies "evening".
"black-and-white striped woolly hat" and "award-winning album" are similar cases.
