Suppose I am writing a thank note to my foreign friend for his hospitality extended to me during my stay with him, Shall I use simple past or president for the following sentences? 

I am/was grateful for the time you spent with me.
It is/was a great honor to be invited to your home and meet your wife
I am/was glad to have the opportunity to see your local oporation.

I would do this:

I am grateful for the time you spent with me.  -- You are grateful now.
It is a great honor to be invited to your home and meet your wife -- You are to meet his wife.
I am glad to have had the opportunity to see at your local corporation. -- Your opportunity came about in the past.

You are still grateful and glad, but you had the honor described in the past.

Try the present tense as it better reflects your current appreciation, though you can use:

It was a great honor to be invited to your home and meet your wife
