In addition, this program assists students in three areas that prevent students from succeeding: lack of writing skills, lack of professional role models, and insufficient knowledge of the educational system in The United States.

I think this sentence is perfectly fine.

If you are concerned about the items following the colon being fragments, this is a standard usage of the colon. Lack of writing etc form an explanation, definition, or listing of the three areas.

The colon can be thought of as being in the place of such expressions as namely or as follows.
