Hello, it's about Molecular gastronomy.

What do the words in bold mean? and the whole sentence.

It took four hours and $250, but when melon caviar hit the iberico consommé, it was magic.

I looked up in a dictionary "consomme" is a vegetable and meat clear soup. Don't undersand how melon ( dessert) hit soup

"iberico consomme" =  In this case, a clear soup made from jambon iberico, which is the ham made from pigs that have been fed on acorns.

Melon is not always a dessert. In this case, the melon flesh is in small balls [melon caviar] , which are added to the consomme.

 It's a recipe typical of il Bulli which is said to be the best restaurant in the world. Huh?  Itr is certainly one of the most expensive!
