This sentence is wrong because it lacks of "s" in "he rest". Is that right?

"Al's doctor insists that he rest for a few days."

rest is correct - one of the few remnants of the subjunctive mood in English.  Many people who have no idea what the subjunctive is even use this form.

A few more verbs that share the same usage as 'insist':

advise, command, demand, require, request, ask, suggest, recommend, ...

ex)The doctor advised that he stop smoking.

ex)She asked that her name not be revealed.
