I think it would be better to say 'we went clubbing over the new year' or 'we went clubbing on new years eve'

"We went clubbing over the new year" is wrong. "We went clubbing on New Year's Eve" is right (note capitalization and apostrophe). Another possibility is "We went clubbing over New Year's," which is a more general way of saying "...during the New Year's holiday."
