How come 'it' is compatible with the plural subject? How does 'it' work in these cases?

1. It is a lot of things to do.

2. People ignorant to the sport seem to think it is a lot of cars colliding into one another.

#1 is ungrammatical, Jack.
#2 is OK because the it refers to the sport.  ('Ignorant of the sport' is correct)
