There are many styles for writing references, so there may be many correct answers. Here's mine.

I was taught that, in an edited book, you write the name of the author of the chapter, then the year. Next, "In:" , the name of the editor of the book followed by "(Ed.)", the title of the book, the publisher and - finally and optional - the number of the pages.
So, if John Doe were the author of the chapter "French interviews Paglia" (I'm making up both the name of the author of the chapter and the title of the chapter), and the chapter were part of the book "Screen Violence", that would be:
Doe, J. (1996) French interviews Paglia. In: French, K. (Ed.) Screen Violence. London: Bloomsbury, pp. 35-51.As for the citation within the text, it would be something like:
As Doe (1996) argues, ...
