Are these phrases interchangeable? In 2, is "but" optional? Does the meaning differ in 2 with or without but? Thank your very much for your help.

#2 needs its 'but'; it is not an option. I am not so familiar with #1, but it seems interchangeable with #2:

I like not only sushi, but also sashimi.
I like not only sushi, but sashimi as well.

I not only ski, but I also sky-dive.
I not only ski, but I sky-dive as well.

It appears to me that the 'as well' form is slightly more contrastive.
