in the sentence, "either one will work for me", which ones are the pronouns and nouns?

 

with respect to "either one" is one the noun and either the indefinite pronoun?

Either is an adjective; one is a pronoun, me is a pronoun. There are no nouns (except that pronouns are a sort of noun).
