I will have been writing to my friend in Uganda for one year this May.

I will have been writing to my friend in Uganda for one year by this May.

I will have been writing to my friend in Uganda for one year in May.

Do these three sentences sound OK? Please advise.

They all sound OK, yes.  Your first one is best, in my opinion.
