I did a google search and found a few little things, mostly just the olympic website itself. I use texts from previous olympics, about special events or competitors, so that I can edit them for my classroom.  We talk about more general ideas, like favorite events, torch lighting, the parade of nations, and other things which happen every four years.  Watching the results can be fun and interesting, but reading the current sports pages is usually confusing for non-native speakers.
