when do you use the word "percentage" and when do you use "percent"? For example: Data collected to differentiate the percentage allocated to maintenance Is this correct?

per cent= an amount of a total divided into 100 hundred.
percentage= any proportion or share in relation to a whole.

ex I am one hundred per cent sure that this percentage is wrong.

Yep Maj explained it perfectly! I've spent 10 mins trying to think of another example of this: 'plume' 'plumage' is the only thing I've come up with!
