Please help me to clarify the following,

1) I see people carry open umbrellas.
2) I see people carry open umbrella.

If 1) is correct, then how do you express when you see people carry two unbrellas instead of one.

Here people is plural, so 1) is right. If you see every people carrying two umbrellas, you can still write "umbrellas".

A more corrected form of your sentence would be:
I see people carrying open umbrellas.
I see people carrying two open umbrellas.
