Robert Browning's "My Last Duchess" or "The Bishop Orders His Tomb at St. Praxis Church"  are both good poems to explicate.

Here are a couple others:

Lord George Gordon Byron's "She Walks in Beauty"

Percy Shelley's "England in 1819"

bread and music by conrad aiken.  it is an easy poem, not too much into difficult symbolism.  good for your first peom explication.
