What exactly does that mean? I've been reading that phrase since grade school, yet I'm not very sure if i really got it right.

Some examples of replacing language with politically correct terms:

Blind - Visually impaired

Handicapped - Handi-capable

Politically Incorrect refers to knowing how not to offend delicate sensibilities and choosing to offend them anyway.

Where as a few years ago it was common to call an African American a Negro, now it is politically incorrect to do so and is infact offensive. African American is the politically correct term to use.

Blind ==> Visually impaired  (Eg. This section on the bus is reserved for the visually impaired.)

Handicapped ==> Handi-capable : although "handi-capable" for some unknown reason became widely used, this is not a good example.  Being "Handi-capable" sematically is just opposite to being handicapped.

Faggots ==> Homosexuals

Blacks ==> African Americans

Indians ==> Native Americans

Mexicans ==> Hispanics

However, keep in mind that one doesn't have to use offensive terms to become insensitive to a group.  Political correctness applies not only to the use of ill- or well-chosen terms but also to the whole idea or attitude in your sentence.

Hi,

Don't call yourselves Orientals. Call yourselves Asians if you're from China, Japan, Korea, Vietnam, Tailand, Cambodia...etc.

I often see Asians say/use Oriental food, Oriental noodles.  Doesn't it sound better such as Asian food, Raman?

It's a little tricky to start telling people what to call themselves. Perhaps it's better to just focus on what we should call them.
