I'm thinking about the lolly pop /ice cream thingy but with a wooden stick, so how come popcycle is not a word?

The word you're looking for is popsicle. It's actually not ice cream on a stick, but more like flavored ice. Regardless, it's refreshing on a hot summer day, if you can lick fast enough that it doesn't melt all over your hand!

It gets the second half of the word from icicle (frozen water), not from something like bicycle,  'pop' being a casual word for cold flavored drink
