The only time you omit the preposition "of" is in context such as # 1

1) I asked Mary to help me get some beef from the supermarket while she was shopping but she got Pork INSTEAD (no [of] )

2) I asked Mary to help me get some beef from the supermarket while she was shopping but instead of beef, she got pork.

Notice how the 2 sentences are essentially the same but one used the preposition "of" when a noun is to follow.  You may use Instead at the end which does not require the use of - "of".
