Joe is submitting a report from/of the meeting
Joe is presenting/speaking at a seminar/workshop
John Doe is a professor from/of *** University
Then, please consider this (as??) a reminder.

I assume you want a natural, common way to say these things.

Joe is submitting a report of the meeting.
Joe is presenting/speaking at a seminar/workshop.
John Doe is a professor at *** University.
Then please consider this (as) a reminder.

Thank you.  What is the difference?

He is presenting/speaking at a workshop/seminar/conference? When is 'presenting' appropriate and when is 'speaking' appropriate? Speaker or presentor?

There's often not any difference. However . . . 
 presenter - Sounds like it involves offering/introducing something new for public consideration. Also sounds like it may involve visual aids and not simply words.
