I am starting a company that installs pools and spas.  I thought the proper way to write this was Tropicool Pool's & Spa's, but had someone tell me the apostrophe's were incorrect.  Please advise.

that person was right. You never use an apostrophe to make a plural.

You should use pools and spas (and apostrophes).
