I would write it in lower case. There are probably other style guides that would say to make it a capital. If it were "...is Art of the Late Renaissance," the proper name of a course listed in a course catalog, I would capitalize it, but "science" is too general to merit a capital for me.

As a subject, the word should not be capitalised.
