In most contexts, there is very little difference between switch and change. You can easily go back and forth between things you switch or change, like channels on your television.
Switch out is the same as replace, but isn't very common, at least in the US. Once you've switched out, you're probably not going back to the prior version.
Shift is used in fewer contexts. "Let's shift gears here" doesn't mean literally changing gears in your car (though it CAN), but "let's change the topic." Shifting also shows a transition from one phase to the next. We've shifted from the planning phase to the execution phase of the project, for example.
I don't know what a VCD is, so I can't tell you about your sentence. But "I switched from the sports channel to the news" would use a from A to B construction.
