Can verbs knit, sew, and stitch be used interchangeably?

No.

Sew and stitch are very similar and can probably be used interchangeably in most cases. They are using a single small needle and thread to join fabric together.

Knit is completely different. This is using two (at least) large needles with wool to create a piece of fabric.
