 Is the above sentence the shortened form of " While speaking of travelling , I would like to ask you whether you are going anywhere exciting this year."

Similarly , is the sentence " To be honest , I don't know anything about her." a shortened form of

 " To be honest , I would say I don't know anyhing about her.

No, they are not shortened forms of anything else.  Your alternatives are stilted paraphrases.
