I am unsure about using suceed and to success

Some possible usages:

1a. However, for most Latinos education has always been the key to success in the U.S.. [To success in the U.S. is a prepositional phrase modifying the noun key.]

1b. However, for most Latinos education has always been key to succeeding in the U.S.. [Succeeding is a gerund. To succeeding in the U.S. is a prepositional phrase modifying the adjective key.]

In your second sentence, I think you can omit society since it is understood that employment takes place within a society.

2. Latinos see college as an opportunity to increase their [salaries and] employment opportunities beyond those offered to uneducated people.

I agree with rvw on the first point:

It's 'been key to success' or 'been a/the key to success'

Re: the 2nd point, as it is the sentence doesn't make any sense.

I think what you're trying to say is

'Latinos see college as a way to achieve higher salaries and better employment opportunities than uneducated people'

In your sentences there are several things to correct. You should replace 'that' with 'than' (a comparative), and try not to repeat 'opportunity'

Another alternative in whach 'that' would be ok is:

'Latinos see college as an opportunity to increase their employment opportunities in A society that DOESN'T OFFER THEM to uneducated people.'
