You like to take the stairs. I don't.

Can 'take the stairs' be replaced with 'walk the stairs' without changing its meaning?

No, 'take the stairs' is the idiom. 'Take' means 'use', not 'walk'. 'You like to use the stairs' is fine. There is presumably also an elevator.

'The question is,' said Humpty Dumpty, 'which is to be master-- that's all.'
