Hi       May I ask you a question?

I use "less" before uncountable noun, and "few" before plural noun.

But I find many sentences used "the least of" with plural nouns.

Is this sentence grammaticaly correct?

Your problems are the least of my concern.

Thank you

Yes.  It's correct.  But here you have least used with a singular noun (concern), not a plural, so I don't see the point of your prefatory remarks, though I suppose you intended to write the more idiomatic concerns.  In any case, least here means "least important".
