use of dash

Hi,

Please tell me more about this use of a dash to restate. Are they really restating?

Some sentences from the online source community-2webtv.net, 'Armchair Punctuator':

Consider how much rain forest the world loses each year--about two percent.

Knowledge produced through science is eternal--that which is constant.

If you search the Forum with 'em dash', you'll find a lot of discussion. Personally, I feel this style is too flamboyant, particularly if a writer does it a lot. I prefer simply to use a comma.
